Skinny Vegetarian Breakfast Muffins
Oh yeah, look what i’ve got here! A new recipe! I know i haven’t been posting very much lately (liar! not posting at all) but after follow this recipe and make these awesome muffins you will forget all about my absence! OK here we go!
Ingredients:
2 cups whole wheat flour
1/2 cup plain flour
1/2 cup brown sugar
1/2 honey
2tsp cinnamon
1tsp salt
1 1/2 cups soya milk (or rice, almond milk)
4 tbsp applesauce 
1/2 cup crushed raspberries (optional)
2 tsp Vanilla extract
3tsp baking soda
Splash of olive oil
Squeeze of lemon juice
Muffin tray
Muffin paper cases
How to make them:
Preheat your oven to 200degrees C. 
Mix all of the dry ingredients and all of the wet ingredients in separate bowls and then combine the two. Make sure there are no flour clumps. Spoon the mixture into the muffin paper cases (these should be placed in the holes in the tray) filling about 3/4 of  a paper case. Bake for about 20minutes until the surface of the muffins looks nice and golden. 
The mixture should make approx. 12 muffins
This recipe is adapted from http://nutritionfor.us/2012/01/eat-skinny-be-skinny-vegan-blueberry-muffins/  . I tried to make the blueberry muffins, but the cinnamon ones tasted much better. I also used honey instead of white sugar (honey makes the muffins smell incredible and taste even better ), more whole wheat flour and less plain flour (i don’t like plain flour very much)
